برآورد تمایل به پرداخت مصرف‌کنندگان برای گوشت مرغ بدون آنتی‌بیوتیک در شهر شیراز

چکیده

مقدمه و هدف: در کشورهای توسعه‌یافته به دلیل ارتقای استانداردهای زندگی و افزایش اهمیت سلامتی در بین افراد جامعه و همچنین افزایش آگاهی مصرف‌کنندگان از مزایای محصولات سالم، میزان تقاضا برای انواع محصولات غذایی سالم از جمله مرغ بدون آنتی‌بیوتیک افزایش یافته است. در این مطالعه تمایل مصرف کنندگان برای پرداخت گوشت مرغ بدون آنتی بیوتیک ارزیابی شده است.
مواد و روش­ها: در این مطالعه تمایل به پرداخت مصرف‌کنندگان برای گوشت مرغ بدون آنتی‌بیوتیک در شهر شیراز با استفاده از روش ارزش‌گذاری مشروط و سؤال‌های انتها باز برآورد شد. داده‌های مورد نیاز با تکمیل 576 پرسشنامه در اردیبهشت سال 1397 جمع‌آوری شد.
یافته­ ها: نتایج نشان داد متغیرهای جنسیت، سطح تحصیلات، بعد خانوار و درآمد اثر معنی داری بر تمایل به پرداخت اضافه برای گوشت مرغ بدون آنتی‌بیوتیک دارند. تحلیل داده‌ها نشان داد که بیش از 90% مصرف‌کنندگان به طور متوسط حاضر به پرداخت 19490 ریال اضافه برای هر کیلوگرم گوشت مرغ بدون آنتی‌بیوتیک نسبت به معمولی می‌باشند.
بحث و نتیجه ­گیری: بنابر نتایج این مطالعه بازار مصرف بالقوه‌ای برای گوشت مرغ بدون آنتی‌بیوتیک در شهر شیراز وجود دارد و تولیدکنندگان می‌توانند با عرضه گوشت مرغ بدون آنتی‌بیوتیک از مزایای آن بهره‌مند شوند.

چکیده [English]

In this study, consumers’ willingness to pay for antibiotic-free chicken meat in Shiraz was estimated by utilizing contingent valuation method with open-ended questions. Data were collected by completing the questionnaire from 576 citizens in May 2018. Since the data on consumer willingness to pay extra amount for chicken antibiotic-free were negative, the Tobit model was initially estimated, but the basic hypotheses of this model including homoscedasticity and normality of the residual sentences were rejected. A two-step Heckman model was applied to identify the factors affecting the selection and estimation of the extra amount they would be willing to pay for antibiotic-free chicken compared to that for conventional one. Data analysis showed that about 90% of the people are willing to pay 19490 Rial/Kg on average as additional amount to buy antibiotic-free chicken. According to the results of this study, there is a potential market for antibiotic-free chicken meat in Shiraz, and producers can benefit from the supply of chicken meat antibiotic-free.
